Get ready to pizza party with our gluten-free Zucchini & Goat Cheese pizza! This light and fresh pizza is topped with creamy goat cheese and vibrant green onions. The zucchini ribbons make for a crisp, flavorful addition that's perfect for a little slice of heaven.
preparation
step 1 Toss zucchini and a pinch of salt in a large bowl. Set aside for 15 minutes, tossing occasionally, until some of the moisture has left the zucchini. Drain and pat the zucchini slices dry on a paper towel.
step 2 Preheat the oven to 450 F. Unroll pizza crust and remove from parchment. Place on a baking sheet and brush edges with olive oil. Bake for 5 minutes.
step 3 Sprinkle mozzarella cheese on top of the pizza, leaving a 1-inch border. Top with zucchini slices.
step 4 Bake for 5-6 minutes, until cheese is melted. Top with goat cheese crumbles and green onions. Serve hot.
