preparation
step 1 Preheat the oven to 400°F.
step 2 Unroll the puff pastry sheet and cut it into 12 squares. Beat the egg and milk together to create an egg wash. Brush the egg wash onto each square. Fit each puff pastry square into a muffin tin so that it lines the bottom.
step 3 To make the buffalo chicken puff pastry, combine the rotisserie chicken, cream cheese, greek yogurt, half of the cheddar cheese, buffalo sauce, garlic powder, and a few drops of Cloud23 Hot Habanero in a bowl. Spoon the mixture into 4 of the puff pastry cups. Top with the remaining cheddar cheese.
step 4 To make the spicy tomato basil puff pastry, mix the pesto with a few drops of Cloud23 Sweet Jalapeño. Spoon the pesto into 4 of the puff pastry cups. Then add some cherry tomatoes into each cup.
step 5 To make the goat cheese and sweet onion puff pastry, add a spoonful of the goat cheese into the remaining 4 puff pastry cups. Mix the pepper jelly together with a few drops of Cloud23 Sweet Jalapeño. Add a spoonful of pepper jelly onto the goat cheese. Top each cup with caramelized onions..
step 6 Bake the puff pastry cups in the oven for 20-23 minutes until golden brown. Garnish the buffalo chicken with sliced green onions, add basil leaves to the spicy tomato basil, and sprinkle chopped chives onto the goat cheese and sweet onion. Enjoy!
