Fresh for summer and full of pride! These fudgy brownie rainbow cookies are gluten free and a superb, better for you sweet treat!

- 1 package Sweet Loren’s Fudgy Brownie Cookie Dough
- 2 tbsp unsalted butter, softened
- 1/3 cup ricotta cheese
- 1 cup powdered sugar
- 1/4 tsp vanilla extract
- Fresh fruit: strawberries, mango, kiwi, blackberries
step 1 Bake Sweet Loren's Fudgy Brownie Cookies according to package instructions. Remove from cookie sheet and cool completely.
step 2 While the cookies cool, make the ricotta frosting by adding the butter and ricotta to a small bowl. Whisk vigorously until smooth. Add the powdered sugar and vanilla and mix until light and fluffy.
step 3 Once cookies cool completely, frost the cookies with the ricotta frosting and top with fresh fruit.
