- 12 oz. package Sweet Loren"s Sugar Cookie Dough
- 1/2 Tbsp unsalted butter
- 3/4 tsp cinnamon
- 3 granny smith apples, peeled and 1/4 inch dice
- 4 1/2 Tbsp granulated sugar
- 2 1/2 Tbsp. water
- 1 tsp cornstarch
- 1 Tbsp water

Bite into the unexpected! These gluten-free apple pie cookies are a delightful variation on the classic. Imagine a soft and chewy sugar cookie, filled with a warm and gooey apple pie filling, and finished with a sprinkle of cinnamon. It's like a cozy mini apple pie in every bite.
preparation
step 1 Preheat oven to 235 degrees Fahrenheit and line a baking sheet with parchment paper.
step 2 Place desired amount of Sweet Loren's Sugar Cookie dough onto the baking sheet, spacing them apart. Bake them in the oven for 15 minutes.
step 3 In the meantime, heat a sauce pot over medium heat. Add in the unsalted butter and allow it to melt. Mix in the cinnamon and stir with the butter for 30 seconds. Then mix in the diced apples, granulated sugar, and 2 1/2 tablespoons of water.
step 4 Cook for 4-6 minutes, stirring occasionally until the apples have slightly softened. In a separate small bowl, mix together the cornstarch and remaining tablespoon of water to create a slurry. Pour the slurry into the pot and mix. Cook the apple filling for another 1-2 minutes until thickened then remove from heat.
step 5 When the cookies are finished baking, use the back of a tablespoon measuring spoon to create a divot in the center of the cookies. Fill the cookies with a spoonful of the apple pie filling. Allow the cookies to cool before serving. Enjoy!
