Ice Cream Cookie Sandwiches

We got the sweet scoop for you!

Cool off the kids and kids-at-heart with homemade ice cream sandwiches that can be ready in no time, or waiting in the freezer for when you get that calling. The only thing that makes a freshly baked cookie better, is a scoop of ice cream sandwiched in between two Sweet Loren’s cookies. So many fun ways to dress up your sandwiches below – from edible dough to endless topping ideas!

General Steps:

  1. Preheat oven to 325°F.
  2. Bake a package of Sweet Loren’s dough on a baking sheet about 2 inches apart from one another so they have room to spread. Place cookie discs on parchment paper for easier clean up.
  3. Bake until light golden brown, about 14 minutes.
  4. Let the cookies cool before assembly beings, otherwise the ice cream will melt!
  5. Assemble as per the instructions below.

The Classic

Everyone knows a classic never goes out of style!

Ingredients (Per each ice cream sandwich)

  • 2 Sweet Loren’s Chocolate Chunk Cookies
  • 1 Scoop of Vanilla Ice Cream (or any flavor you like!)

Steps:

  1. Scoop a spoonful of ice cream onto one of the cookies.
  2. Use the other cookie to squish it down. Enjoy!

Half Dipped

Life is short, dipped in chocolate for the win!

Ingredients (Per each ice cream sandwich)

  • 2 Sweet Loren’s Chocolate Chunk Cookies
  • 1 Scoop of Vanilla Ice Cream (or any flavor you like!)
  • 1 cup chocolate chips
  • 1 teaspoon coconut oil

Steps:

  1. Follow the general steps above.
  2. In a small bowl, melt coconut oil and chocolate together in microwave or in a medium-heavy pan over low heat, mixing often.
  3. Scoop a spoonful of vanilla ice cream onto one of the cookies.
  4. Use the other cookie to squish it down.
  5. Dip half the cookie sandwich in the melted chocolate. Place on parchment paper and freeze for 10 minutes until chocolate coating hardens. Enjoy!

Black & White

For those indecisive days…

Ingredients (Per each ice cream sandwich)

  • 1 Sweet Loren’s Sugar Cookie disc
  • 1 Sweet Loren’s Fudgy Brownie disc
  • 1 Scoop of Vanilla Ice Cream (or any flavor you like!)

Steps:

  1. Before you follow the general steps above, cut a disc of our Fudgy Brownie dough & Sugar Cookie dough in half, then push together to form one whole disc of half Fudgy Brownie and half Sugar Cookie dough.
  2. Follow the general steps above to bake.
  3. Scoop a spoonful of vanilla ice cream onto one of the cookies.
  4. Use the other cookie to squish it down, and enjoy!

Sprinkles

Because life is better with sprinkles

Ingredients (Per each ice cream sandwich)

  • 2 Sweet Loren’s Sugar Cookies
  • 1 Scoop of Vanilla Ice Cream (or any flavor you like!)
  • 1 cup sprinkles

Steps:

  1. Follow the general steps above.
  2. Scoop a spoonful of vanilla ice cream onto one of the cookies.
  3. Use the other cookie to squish it down.
  4. Roll ice cream cookie sandwich in a bowl with the sprinkles so that they stick to the sides. Enjoy!

“ChipWich” Cookie Sandwich

If you love mini chocolate chips, this is a heavenly combo

Ingredients (Per each ice cream sandwich)

  • 2 Sweet Loren’s Sugar Cookies
  • 1 Scoop of Vanilla Ice Cream (or any flavor you like!)
  • 1 cup mini chocolate chips

Steps:

  1. Follow the general steps above.
  2. Scoop a spoonful of vanilla ice cream onto one of the cookies.
  3. Use the other cookie to squish it down.
  4. Roll cookie sandwich in a bowl of mini chocolate chips so the sides get covered in chips, then enjoy!

  • 2 Sweet Loren’s Fudgy Brownie Cookies (or any flavors work well!)
  • 1 Scoop of Sweet Loren’s Edible Cookie dough

Steps:

  1. Follow the general steps above.
  2. Scoop a spoonful of edible cookie dough onto one of the cookies.
  3. Use the other cookie to squish it down, and then enjoy!
