Peanut Fudge Pie

This pie is a MUST MAKE this Thanksgiving or any gathering this holiday season. A southern classic made extra decadent with a rich fudge layer between the peanuts and the cookie crust. Just make sure you have plenty of ice cream-this pie is screaming for a scoop!

  • 1 package Sweet Loren's Peanut Butter Chocolate Cookie Dough
  • 8 oz bitter sweet chocolate, finely chopped
  • 3 Tbsp unsweetened cocoa powder
  • 1/2 cup coconut cream or heavy cream
  • 1/2 cup cane sugar or coconut sugar
  • 1/2 cup agave nectar or maple syrup
  • 4 Tbsp coconut oil or butter, melted and cooled slightly
  • 1 tsp vanilla
  • 1/2 tsp sea salt
  • 3 large eggs
  • 2 cups roasted peanuts

1. Preheat oven to 300F. Press dough disks into well greased pie pan (example here) and bake for 20 minutes. Take out and press down rising down on bottom of pan and sides to flatten dough into a pie crust. Bake for 10 more minutes. Take out and let cool.

2. Place the chocolate and cocoa powder in a small heat proof bowl. In a small saucepan, bring the cream to barely a boil and then pour over the chocolate, stir until chocolate is melted and well blended with the cream. Pour into the pie crust and let cool for 10 minutes.

3. In a large bowl whisk the sugar, maple syrup, butter, vanilla, salt, and eggs and then stir in the peanuts. Pour the filling over the chocolate in the pie crust. Bake for 50-60 minutes at 300F until filling is almost set. Let cool completely, at least 4 hours, once out of oven.
