Let’s be honest, making ice cream from scratch is no simple undertaking, which is why I’m obsessed with banana “ice cream”. It’s creamy, delicious, healthy, and comes together in under 5 minutes (provided you have bananas in the freezer already). Serve with one of our freshly baked Peanut Butter Chocolate cookies and you have heaven in a bowl.
- 1 Freshly baked Sweet Loren’s cookie (we loved Peanut Butter Chocolate)
- 2 Bananas, sliced and frozen
- Place frozen banana slices in a food processor and blend, scrapping down the sides periodically, until smooth. TIP: you can add water or coconut milk for a creamier consistency.
- Scoop into a bowl and serve with a warm cookie
*This is a great base recipe to build off of, you can add chocolate chunks, coconut flakes, cookie crumbles, nuts-you name it! Just add to food processor with the banana slices for a well blended mix or sprinkle it on as a topping!
