Protein Power Bites


These little bites of power are so simple to throw together when you need a boost or to make ahead for a quick breakfast or mid-afternoon snack when you feel your energy levels start to lag. You’ll love the extra crunchy texture and sweetness from the cookie crumbs. I used Chocolate Chunk cookie for this recipe, but Peanut Butter Chocolate or Oatmeal Cranberry would be just as delicious. Use any nut butter of your choosing and get rolling!






What you’ll need:

  • 1 cup rolled oats
  • 1/2 cup sunflower butter
  • 1/3 cup cookie crumbs (about 2 cookies)**
  • 1/4 cup white chia seeds
  • 3 tablespoons honey
  • 1/2 teaspoon vanilla
  • pinch of salt

**To make cookie crumbs, place 2 cookies in food processor and blend.


  1. Mix all ingredients together in a bowl.
  2. Scoop out spoonful of mixture and roll into 1 inch balls.
  3. Enjoy immediately or freeze in an airtight container for easy snacking!
