Bananas Over This Peanut Butter Cream Pie

Who doesn’t love a smooth banana cream pie? Let’s make it completely irresistible by adding a peanut butter twist, and a Sweet Loren’s cookie crust. This recipe is non-dairy, whole grain, and only uses natural sweeteners. Serve chilled, straight from the freezer. Now you can have your pie, and eat your cookies too!

For the crust:

For the filling:

  • 1 cup peanut butter (or nut butter of your choice)
  • 2 tablespoons coconut oil or butter, melted
  • 2 tablespoons honey
  • 3 medium (just ripe) bananas
  • 1/2 cup full fat coconut cream/milk
  • 1 teaspoon vanilla
  • 1 tablespoon lemon juice
  • 1/4 teaspoon sea salt

For the topping and Peanut Butter Drizzle (to put on right before serving):

  • 1/4 cup peanut butter
  • 1 tablespoon coconut oil, melted
  • 2 tablespoons honey
  • 1/4 cup shaved dark chocolate
  • 1/4 cup crushed peanuts
  • 2 bananas (perfectly ripe), sliced on the diagonal


1. Preheat oven to 300F. Let cookie dough come to room temperature, so easier to work with. Press cookie dough discs evenly across the bottom and up the sides of a well-greased 8 inch pie pan. Bake for 20 minutes. Remove from oven and with a rounded part of a spatula or spoon, gently press down pie dough to stop it from rising completely. Bake for another 10 minutes. Take out when just lightly golden brown, and let cool completely.

2.  Add all ingredients for filling to a standing mixer, and mix on medium until well-incorporated, about 90 seconds. Pour into cooled pie crust; cover and freezer for at least 4 hours until set.

3. Remove the pie from the freezer. Just before serving, arrange sliced bananas on the the pie as you’d like. Next, mix peanut butter, coconut oil, and honey together in a small bowl. Drizzle over the banana slices then sprinkle chocolate shavings and chopped peanuts over everything. A creamy decadent pie that doesn’t weigh you down… what a delicious idea! Store frozen, covered, and enjoy within one month.
